Spinach Salad with Petee’s Yummy Dressing

Spinach salad is one of my favs no matter what time of the year it is. When I can get beautiful strawberries, I add them. If mangos are available, I substitute those. When I have caramelized peanuts, I throw them in. Or I add chopped almonds or walnuts. If I need a hit of protein, I add a boiled egg. Often I add dried cranberries. Sometimes bacon. Sometimes figs and goats cheese.
When I’m having a party, I’ll make up a batch of this dressing to go on top (though not with the figs and goats cheese, for that I use a lighter dressing.) And whenever I’ve served this dressing everyone wants the recipe. I hand it out willingly. After all, Petee was lovely enough to share it with me. Enjoy!
Petee’s Dressing
- 1 tsp dry mustard
- 1 tsp paprika
- 1 tsp celery salt
- 1/3 cup honey
- 1/3 cup wine videgar
- 1 tsp lemon juice
- 1 clove garlic
- 1 cup salad oil
Blend all the ingredients but the oil. Add the oil slowly so the dressing emulsifies.
Spinach Salad
- Baby spinach
- Boiled egg, sliced
- Grape tomatoes
- 3 strips of bacon fried crisp and crumbled
- Mushrooms, sliced
- Strawberries, sliced
- Walnuts (candied or otherwise)
Toss all the ingredients just before serving.

I love that you not only tell people the right thing to do “Eat at home!” But you also tell them how to do it “Here’s a recipe!” You’re so great, Gail, keep it up!!

I tried Renee’s Tangerine and Key Lime dressing yesterday, after you referenced it in a bean salad blog. Yum! You should also try adding 1 -2 tbsp of jerk seasoning to a store-bought Italian dressing too!
You could also add Chia seeds to sprinkle on top for extra protein. They absorb 10x their weight in water and help you feel full, longer. We keep a jar on the counter, next to the Salt and Pepper.

I think eating salads must be like budgeting – we’re not taught it and it doesn’t come naturally so we have to push ourselves to do it. – and in the end it’s we’re much better off for it.

Sounds yummy – olive oil mixed with balsamic vinegar (fig or strawberry) is also a nice alternative and gives the salad a bit of a ‘kick’.
